For the base
200 g digestive type cookies
100 g butter, melted
For the cream
400 g cream cheese
300 g cream 35%
120 g powdered sugar
1 tbsp lemon juice
For the kiwi jelly
20 g gelatin sheets
1,200 g Kiwi
250 g granulated sugar
For the base
Preheat the oven to 180°C in the air.
Beat the cookies in the food processor with the knives until they become
powder.
Add the melted butter and beat until the biscuit has the texture of wet sand.
Transfer the mixture to a 23 cm diameter springform pan.
Press with the bottom of a glass until we have the same thickness of cookie
in the mold.
Bake for 10 minutes.
Remove the mold from the oven and let the base cool down.
For the cream
Beat the cream cheese with the cream cheese, powdered sugar and lemon
juice in the bowl of the mixer for 1-2 minutes until the ingredients are
homogenized and have the texture of yogurt.
Spread the cream on the cold base.
Cover a bowl with a diameter of 20 cm from its outer side with film.
Press the cream that we spread on the mold with the bowl in order to
create a well in the cream.
Transfer to the refrigerator and leave for 2 hours to harden.
Then we remove the bowl. As we will notice, the cream is higher on the
sides of the form than in the center.
For the kiwi jelly
Soak the gelatin sheets in a bowl of cold water.
Clean the kiwis, cut them in half and remove the white part with a knife.
Mash the green part of the kiwis in the food processor with the knives,
while discarding the white part so that the jelly does not become bitter.
Put the kiwi juice and sugar in a saucepan.
Let it boil until the sugar dissolves.
Remove the pot from the heat. Drain the gelatine leaves well and put them
in the pot. Mix well until completely dissolved and transfer to a bowl to cool
slightly, 20-30 minutes. Be careful not to let it cool too much because it will
be difficult to spread.
Pour the mixture into the center of the mold until the kiwi jelly completely
covers the cream. Put the form in the fridge and leave for at least 4 hours
until the mixture hardens.
Unmould and serve.
